I grew up in
Pennsylvania Dutch country and love the
flavors of the foods. Among my favorites in this section
are the
Pennsylvania Dutch Lemon Pie
and Pennsylvania Dutch Sauerkraut Casserole
Pennsylvania Dutch Sauerkraut Casserole
1 lb. sauerkraut
1 c. sugar
6 slices bacon
1 tsp. black pepper
Mix sauerkraut, pepper and sugar together
in 1-1/2 quart dish. Cut bacon slices in
1 inch pieces and mix slightly with sauerkraut.
Bake at 325 degrees for 2-1/4 hours

Dutch Lemon Pie
COOK TOGETHER:
1 cup molasses or maple syrup
1 cup brown sugar
2 cups hot water
1 egg, beaten
SECOND PART:
1 cup granulated sugar
1/2 cup lard
1 egg
1 cup sour milk or cream
2 cups flour
1/2 tsp. soda
2 tsp. baking powder
Mix second part like you would mix a
cake. Divide batter into four unbaked pie shells. Pour syrup over the
batter and bake at 400
for 10 minutes, then reduce heat to 350 and bake until done.
Cake will rise to top during baking.
